Adebisi still very notably and famously worked in the kitchen. Meaning that at least 3 times a day, not only was he not Em City, neither were any of his allies.
My point is I don't think this fact was ignored for plot convenience, I think Saïd is such a dumbass that taking the 3 seconds to realize this would be so out of character that they had to do it this way.
