The Baking Lady

My grandmother created her own special recipe for chocolate chip cookies. Currently she is suffering from Dementia and has no idea who I am the majority of the time. But the only chocolate chip recipe I ever use is hers because it is so special to me. Something you have to know about me is that cinnamon is my favorite spice, and I put it in nearly everything to give it a little bit more of a pop. One day I added just 2 tsp of cinnamon to my grandma’s chocolate chip cookies and I will never be able to go back to eating regular cookies. 

This fall my families fruit tree produced FOUR giant boxes of sweet peaches. It’s so exciting to see something that started out so small become so big and produce so much. We always knew the potential was there, but this fall we saw it. Well, we didn’t know what to do with all of these peaches so I decided to make peach cobbler cupcakes. And yes, they were as good as they sound. The cake was a cinnamon spice with peach chunks folded in, the frosting was a simple whipped cream frosting, topped with a peach slice. This was an amazing way to celebrate the beginning of fall. 

One of my very first creations when I started experimenting with baking was blueberry lemon cupcakes. Recently, I was thinking about how that’s kind of what got me started on my cupcake obsessions, so I decided to recreate it, but with something a little more classy. Here we have a lemon cupcake with a fresh blackberry cream cheese frosting. The blackberries came straight out of my garden, and man, were they good. Fresh fruit really just knocks any recipe over the top.
