yeah, it's kind of insane actually. i think that because the united states has been very visibly multiracial (whether or not members of each of those races actually had rights/citizenship) since the start of its history, racism is a much more frequently and deeply considered topic of discussion here, which gives the mistaken impression that the united states is overall more racist than other countries.

a couple years ago i noticed a kind of gentrified syrok made with greek yogurt being introduced to the american market under the name "clio" and i tried them, they were fine but nowhere near as good as the classic farmer's cheese version.... but nobody ever really talks about syrok, you gotta go to the eastern european markets here in south brooklyn to get your hands on em (i've found them as far north as kensington but they don't sell them past windsor terrace so for most people it's a schlep). but everyone i've ever made try them immediately becomes obsessed. this is a treat that SHOULD have a viral tiktok moment because it's absolutely so goddamn good but i feel like most people just don't know they exist!!

I've probably invested too much time into this lark.
