Brussels Sprout Salad

This recipe makes two bowls of the size pictured here, or about 4 cups. You may want to double it - you’ll probably finish yours and want more!

Ingredients:

1 lb brussels sprouts, cut in half lengthwise Olive oil for roasting ¾ cup peanuts, coarsely chopped 1 tbsp mint leaves, coarsely chopped 1 tbsp cilantro leaves, coarsely chopped 1 minneola (or other orange/tangerine type fruit)

Dressing: 2 tbsp sesame oil 2 tbsp soy sauce 1 tbsp lime juice 2 tbsp honey 1 tbsp grated ginger 1 tsp chili paste

Instructions:

1. Preheat the oven to 425 degrees F. Coat the brussels sprouts in olive oil and place them face down on a baking sheet. Bake for 25 minutes or until nicely browned.

2. Toast the peanuts in a pan over medium heat for about 2 minutes or until golden brown.

3. Peel the minneola and cut it in half crosswise. Separate both halves into the individual slices.

4. Mix the dressing ingredients well in a small bowl.

5. Combine the brussels sprouts, peanuts, minneola pieces, and herbs in a medium bowl. Pour the dressing over the salad and stir to coat. Serve warm or cold.
