Oven-roasted potatoes and asparagus
Ingredients:
Sliced gold potatoes
Asparagus
Cooking oil
Spices: paprika, onion powder, garlic powder, lemon & pepper seasoning, salt
Minced garlic
Lemon juice
Optional: Maple syrup
bake at 400°F / 204°C for 40-45 minutes
Stovetop smoked sausage jambalaya rice
Cheap and super easy to make, this lunch or dinner is one of my favorites to have as leftovers for the next few days. You will need a cover for your pan.
Ingredients:
Smoked (Andouille) sausage
Diced onion
Diced green bell pepper
Diced celery
1 box of jambalaya rice
Directions:
Cut up the smoked sausage into small bites. Place in a pan with cooking oil and fry until they turn slightly brown.
Dice your onion, bell pepper, and celery, then add all the vegetables and the jambalaya rice to the sausage in the pan. Mix together so it all cooks evenly.
Add water. Bring it to a boil, then cover and let everything simmer for about ~25 minutes.
Once the rice has absorbed the water, plate your dish and save some for leftovers tomorrow.

Stovetop garlic, lemon, & parmesan pasta
*Note: You are going to want a better tomatoes-to-garlic ratio than shown above. I added more tomatoes after taking this picture.
Ingredients:
Pasta (I use gluten-free pasta, which is why my noodles are broken apart)
Fresh garlic, chopped
Fresh cherry tomatoes, halved
Lemon zest
Lemon juice
White cooking wine
Butter
Salt
Basil
Parsley
Parmesan cheese
Cooking oil
Oven-roasted chicken and veggie sheet pan meal
Ingredients:
Chicken breasts or thighs
Mini gold potatoes
Broccoli
Onion
Cooking oil
Spices: salt, pepper, smoked paprika, garlic powder, onion powder, Italian seasoning
Heavy cream
Minced garlic
Shredded parmesan
400°F for 30-35 minutes

Slow cooker chicken tikka marsala over rice (GF)
Ingredients:
1.5 lbs chicken thighs or breasts, cut into bite-sized pieces
1 cup GF full-fat coconut milk
1 medium onion, diced
3 cloves of garlic, minced
1 tbsp fresh ginger, grated
1 can diced tomatoes, with juice
1/4 cup tomato paste
2 tsp GF garam masala
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp ground turmeric
1/2 tsp chili powder
1/2 tsp paprika
1/2 tsp salt
1/4 tsp ground black pepper
1 tbsp lemon juice
optional: 2 tbsp GF plain yogurt
optional: 2 tbsp fresh cilantro, chopped (for garnish)
slow cooker: 6-8 hours (low) or 4-5 hours (high)
White rice
Side: 1/2 can of fiesta corn
Slow cooker Korean beef over rice + broccoli (GF)
Ingredients:
2lbs GF Beef chuck roast, cut into large pieces
1/2 cup GF soy sauce or tamari
1/4 cup honey (or brown sugar)
1/4 cup GF rice vinegar
1 tbsp sesame oil
1 tbsp grated fresh ginger
3 cloves garlic, minced
2 green onions, thinly sliced (plus more for garnish)
1 tbsp sesame seeds (for garnish)
optional: 1/2 tsp crushed red pepper flakes
slow cooker: 6-8 hours (low) or 3-4 hours (high)
Side: broccoli, sesame oil, sesame seeds, minced garlic, sugar, salt, pepper
White rice
