Nutrition Reboot 1-2 and Whole30 1-2
So, it took me Monday and Tuesday to eat and return some various non-Whole30 foods. I still managed to be completely gluten free, but I was eating some rice and dairy products. I have to admit my stomach was already feeling better without gluten.
Lately, my breakfasts have consisted of eggs with some combination of all-natural prosciutto, peppers, garlic, and onions. I also usually have a banana. Yesterday I included a Trader Joe's Very Green Smoothie. I know technically they don't want you to drink juice on Whole30, but there is literally nothing but fruits and veggies in that thing. No added sugar or anything.
Lunches are usually leftover meat and veggies, alongside a salad containing spring mix or arugula, hard boiled egg, avocado, tomato, blueberries, and walnuts. The first couple of days I added EVOO and balsamic vinegar, but it's not my favorite, and very difficult to transport back and forth from work.
Dinners have been fairly plain so far, usually included stir-fried or steamed veggies with a cooked meat. Sometimes I build another salad. Tonight I tried cooking ground beef with coconut oil for the first time. It was actually pretty tasty!
Observations: I'm pretty pleased with how well I've been doing. I've been avoiding sugars and fake sugars. I've also been avoiding caffeine by default, because I usually take my coffee with cream and sugar. Tuesday and Wednesday I started to feel miserable - weak, hungry, and headachey (which, according to this timeline, is totally normal). But, after a few recommendations, this morning I made a glorious discovery: a handful almonds. Seriously, people, this handful of almonds changed my life. It was the fat I was missing to keep satiated. Since I've discovered that (and Larabars - oh man!), I have been feeling much better. I'm no longer having headaches and have much more energy.
I've also been doing a lot of "fooducation" - watching documentaries, reading articles, etc. I've watched "Fat, Sick, and Nearly Dead," "Fat Head," and "King Corn." I've also started reading The Omnivore's Dilemma. Oh, and I'm watching "The Gerson Miracle" as I type this.
So far the main downfall of this (aside from the headaches, which have now subsided) is how much longer it takes me to make all my meals. I know that's a lame excuse, but it has really taken some re-tooling of my schedule and shift in my thinking. That's a good shift to make, though. How strange a culture we live in that we expect to be able to go from hunger to fullness in just a few minutes!
As the first work week of this new lifestyle comes to a close, my main goal for next week is to try new recipes. I definitely need to come up with a salad dressing, and a breakfast alternative. Luckily, I've been looking through Well Fed and have really, really enjoyed it. I'm really excited to try recipes from there!
I am excited about this journey. Tonight, I ate barely seasoned steamed green beans and really, really enjoyed them. I also marveled at how sweet a banana truly is.
