Grinch Cake Pops with Instant Pot Cake 🎄💚❤️

1 box Devils Food cake mix
1 cup vegetable oil (plus extra for greasing)
1 1/4 cups water (for pressure cooking in the Instant Pot)
12-16 oz white baking chocolate
4 tbsp cream cheese frosting
35 red heart sprinkles (1 per cake pop)
Springform cake pan or an oven-safe pan that fits in the Instant Pot
Cookie sheet lined with parchment paper
Prepare the Cake in the Instant Pot:
Mix the Devils Food cake mix in a large bowl according to the box instructions, adding 3 large eggs and 1 cup of vegetable oil.
Grease your springform cake pan with oil and pour in the prepared cake batter. Cover tightly with aluminum foil.
Pour 1 1/4 cups of water into the Instant Pot and place the trivet inside.
Carefully position the cake pan on the trivet, seal the lid, and set to Manual High Pressure for 50 minutes.
Once cooking is complete, perform a quick release. Remove the cake carefully and let it cool completely on a cooling rack.
After cooling, crumble the cake into a large mixing bowl until fine.
Add 4 tablespoons of cream cheese frosting to the crumbled cake and mix thoroughly until you have a dough-like consistency.
Using a cookie scoop or a small spoon, portion the mixture and roll into balls with your hands (about 1 inch).
Place each cake ball on a parchment-lined cookie sheet and freeze for about 15 minutes to firm up.
Decorate with Green Chocolate & Heart Sprinkles:
In a microwave-safe bowl, melt the white chocolate in increments of 30 seconds, stirring in between until smooth.
Add a few drops of green food coloring until you reach the desired Grinch green shade.
Dip each chilled cake ball into the green chocolate, ensuring it’s fully coated, then place them back on the parchment paper.
Before the chocolate sets, add a red heart sprinkle to the top of each cake pop.
