This semifreddo is a rich and creamy dessert that tastes great with raspberries. It's perfect for any event because it has both the richness of cream and the sourness of fresh fruit.
Ingredients: 300g raspberries. 4 eggs. 100g sugar. 300ml heavy cream. 1 tsp vanilla extract.
Instructions: Blend raspberries and strain them to get rid of the seeds. In a heatproof bowl set over a pan of simmering water, beat the eggs and sugar together until the mixture is thick and pale. Take it off the heat and keep whisking it until it's cool. Mix cream and vanilla extract in a different bowl. Whip them together until stiff peaks form. Mix the raspberry puree into the egg mixture slowly. Next, add the whipped cream and mix it in again. Put the mixture into a loaf pan that has been lined with plastic wrap. Put it in the freezer for at least six hours, or until it sets. Cut and serve.

These Pink Lemonade Cupcakes are a delightful summer treat with a burst of lemony flavor and a beautiful pink hue. Perfect for picnics, parties, or any sunny day!
Ingredients: 1 1/2 cups all-purpose flour. 1 1/2 tsp baking powder. 1/2 tsp salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1/2 cup pink lemonade concentrate. 1/2 cup milk. 1 tsp vanilla extract. Zest of 1 lemon. Pink food coloring optional.
Instructions: Warm up the oven to 350F 175C and put paper liners in a cupcake pan. Mix the flour, baking powder, and salt together in a medium-sized bowl using a whisk. Put away. In a different large bowl, beat the sugar and softened butter together until the mixture is light and fluffy. One at a time, add the eggs and beat well after each one. The milk, vanilla extract, lemon zest, and pink lemonade concentrate should all be mixed together well. You can get the pink color you want for your cupcakes by adding a few drops of pink food coloring. Slowly add the dry ingredients to the wet ones, mixing only until everything is well combined. Be careful not to mix too much. Two-thirds of the way to the top of each cupcake liner should be full of batter. In a hot oven, bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean. After the cupcakes have cooled in the pan for a few minutes, move them to a wire rack to cool all the way down. As soon as the cupcakes are cool enough to touch, you can frost them with your favorite pink lemonade frosting and decorate them however you like.
