I only make phở completely from scratch once a year, so Jamie and I wanted to establish the tradition of doing it for Valentine’s Day. This year we were lucky enough to be able to share it with a few of our friends and although cooking was a day-long endeavor, it was definitely the perfect way to celebrate! Happy Valentine’s Day to my amazing 👨🏻‍✈️ and thank you to all of our friends for stopping by to hang out and eat with us!

Not all of the pictures are high-quality, but here are some of my favorite moments. Plus I got to sit in Jamie’s seat and play pretend that I was Captain after he flew me back to MSP. The last two days were an adventure and Jamie flew like a champ through some pretty gross weather, but life is always one big ride with this guy. ❤️

From 11 to 29, he’s barely changed and still as adorable as ever. Maybe I’m just biased, but he’s the cutest pilot I know. Can’t even begin to tell you all how much I love this kid or how much my life has changed since we’ve met. From traveling abroad with him to just being couch potatoes at home (eating our Chinese take-out and watching NCIS), there's honestly no one else I'd rather be living this wild and crazy life with. Thank you for being there for all the shenanigans love. Here's to many many more years of my midnight baking spree and over-ambitious birthday dinners. Happpppppy happpppppy birthday Jamie ❤️❤️❤️

Walking into 2018 with the worse cold ever, because that pretty much sums up 2017. But even with that and the fact that technically my bad luck year isn’t over until mid-February –when the Lunar New Year occurs– I still feel like things are starting to look up again. This past year was full of so many new adventures and beginnings, plus a few sad endings sprinkled in between –what with graduating, finally starting my career, and the passing of my cousin. Throughout the ups and downs though, I had the man I love beside me and some awesome friends who were always there for the laughs and the tears. Can’t thank you all enough for being in my life. Here’s to many many more years of shenanigans ❤️.

Jamie surprised me after Thanksgiving dinner 🍗🥧with this lovely (not to mention delicious) birthday cake 🎂. Can’t believe I’m turning 24 this week and how lucky I am to spend the rest of my life with such a kind, patient, and loving guy 👨🏻‍✈️❤️.

For the first birthday since studying abroad with this amazing lady, I have a new picture to post! Every year I tell you that you are one of my best friends and every year I mean it. You are so centered, solid, and strong. You have been my rock through so much turmoil this last year and you have been and still are an incredibly caring and loving friend. Thank you for coming all the way to Minnesota for my graduation ceremony, for picking up the phone even though 80% of the time you know I’m probably going to sob to you about something or other. Today we laid my cousin to rest and I can’t even begin to describe the heartbreak my entire family felt. My Chi was many things, an intelligent and hardworking young woman who had just passed her board exam to become a lawyer, a beloved daughter and sister, a doting aunt, and a much adored cousin. She was unbelievably kind, patient, and lived her life with such good intentions. She cared deeply about those in her life and loved widely. And she was so so so very loved in return. I wish I could accurately paint the image of her character for you. Show you all the lives she has touched over the years and how truly amazing she was. And I wish I could ask for more time for her to do all the things she had planned, for her to meet more people and change more lives. To be honest I catch myself believing this is all a nightmare, and as clichéd as it sounds, I’m still waiting to wake up from it. But I know my cousin wouldn’t want us to grieve her death, but instead celebrate her life. So I’ll celebrate the bright and beautiful young woman she was and treasure the short time we had together on this Earth. Till we meet again Chi Anh ❤️

You were more like a sister than a cousin and today my world is a little less bright without you in it. I’ll love you forever and miss you always ❤️

I’ve been having a rough week and all, but Jamie sure knows how to brighten up my world. Only the best boyfriend in the world would get me flavored Kit Kats from Canada. Also if you didn’t already know, I kinda collect Kit Kat flavors and this time we found a new one 😊
