Every Saturday at Transylvanian Garden- farmers market we will be hosting a mini market of pop up stalls from 12-4pm.

Our stalls include hand made bespoke gifts that can be personalized, jewellery stall, fresh baked goods that include home made cakes, scones and pies, perfume stall, decorative bottles and candles and mr Vikki’s hot sauces and chilli jars. Come along and support the local community’

Inside we have a wide range of fresh fruit and vegetables all locally sourced. We are open 7 days a week 9am-9pm!

Sri Lanken style curry

Easy to make

Ingredients needed.

1 big aubergine 🍆

1 Onion 🌰

2 Tomato 🍅

Half a can of coconut cream

1 Teaspoon of oil

2 Teaspoon of Mr Vikki's Roxanne's UCC oil

1 Teaspoon of Mr Vikki's Garlic pickle

Half a jar of Mr Vikki's Brinjal pickle

Salt and pepper to taste

Rice

Mr Vikki's Hot Apricot and Mr Vikki's Hot Gooseberry on the side as a condiments

You can also add any meat to this dish if you like.

How to cook.

Chop up Aubergine 🍆 in to medium chunks put in a roasting tin with some oil and salt. Roast for 30 minutes till soft.

Chop up the tomatoes 🍅 into chunks.

Chop up Onion 🌰 into small pieces.

Put the water 💧 for rice on to boil. Add rice when boiling cook till rice is soft.

In a wok or pan add in oil, Mr Vikki's Roxanne's UCC oil and Mr Vikki's Garlic pickle heat for 2 minutes keep stirring then add Onion 🌰 cook till soft and then add the roasted Aubergine 🍆 tomato's 🍅 add the Mr Vikki's Brinjal pickle mix well then add the coconut cream and mix well. Add salt and pepper to taste and simmer for 15 to 20 minutes then Enjoy 🌶️😋
