Ingredients: 1 lb shrimp, peeled and deveined. 1 head cauliflower, cut into florets. 2 tbsp olive oil. 1 tsp garlic powder. 1 tsp paprika. Salt and pepper to taste. 2 cups cooked brown rice. 1 avocado, sliced. 1/4 cup chopped fresh cilantro. 1 lime, cut into wedges.
Instructions: Get the oven ready by heating it up to 400F 200C. Toss cauliflower florets with olive oil, garlic powder, paprika, salt, and pepper in a bowl until they are well covered. Place cauliflower in a single layer on a baking sheet. Roast for 20 to 25 minutes, or until soft and slightly browned. Add a little olive oil to a skillet and heat it over medium heat. Add the shrimp to the pan and season with salt and pepper. Cook for two to three minutes on each side, or until the shrimp is pink and opaque. To put together the rice bowls, put cooked rice into bowls for serving. After the cauliflower is cooked, add cooked shrimp, sliced avocado, and chopped cilantro to each bowl.
