Salted Egg Bun. The bun color sometimes white sometimes yellow. My 2nd most favorite kind of DimSum. It's actually a dimsum for dessert but the salted egg custard is pretty heavy so you should just forget diet wheb having these. The sweet savory taste is so awesome and brings happiness to the mouth. Glory to Xiao Long Pao, the greatest of all dimsum, where from the inside of it's smooth wrapped layer they bless us with the heavenly taste of meat filling and savory broth. One does not simply eat them without respect or their mouth will be burned with the fury of Xiao Long Pao. Bite it a little, let the air flow a bit, and slurp the broth soup before ate the whole of it. A little bit of ginger will enhance their perfection. Yes, this is my favorite Dimsum. ^^; The filling usually use pork, chicken, or crab. But there are some variation of them such as 7-8 colors Xiao Long Pao where each color contains different filling. Easily available from street vendor to high class Chinese Restaurant. While there are also a pork bun with slightly textured bread, my favorite type is the one with soft and smooth bun, encased juicy barbecued pork cubes with a little broth. The moment after the first bite which reveal it's filling and the hot steam from inside is heaven in mouth. This kind of bun also available with other kind of filling like beef, chicken, or mushroom/soy for vegetarian bun. Delicious treat for everybody whether they're a dimsum lover or not. I only ever saw Lo Mai Gai at Chinese restaurant with Dimsum specialty. It reminds me of Bacang or Onigiri. Gelatinous rice with pork meat or sausages (lapchong) at the center, wrapped with lotus leaf and then steamed. Sometimes it also contained salted egg or mushroom. Siomay, Shumai, ShaoMai, perhaps the most well known and most available variant of dimsum. They are sold everywhere from Dimsum specialty or big Chinese Food restaurant to noodle shop (especially chinese style noodle shop with pork) and street vendor. My favorite meat filling is pork, but they can be also made from chicken, fish, or shrimp, and sometimes with a mix of mushroom. The orange decoration on the top could use crab roe or carrot shreds. Chicken feet is also famous for dimsum. People usually enjoy it's texture and a little of spicy taste. I actually never eat it since I hate spicy food and I don't think I will like the texture. But my Mom love it so much and she always order this every time we have a dimsum session at some Chinese restaurant. My family usually bought fried or baked version of KuoTie and we ate it with rice and soy sauce. The skin is a bit thick with this one and there are lots of meat fillings (my favorite is the one with pork meat). The savory meat filling combined with a little bit of crispy texture in the surface is awesome~ There are a version of KuoTie in Japanese called Gyoza. Usually served as side dish for ramen. Shrimp Dumpling or Hakau is the first kind of Dimsum that I fell in love with. It is said to be a dish that show it's chef skill. The skin must be thin and translucent but firm and strong enough so it won't easily break. The superb Hakau would not stick to the paper or container. The shrimp filling inside must be fresh, juicy, and flavorful with springy texture, must be cooked well but not overcooked. Spring season, so it's time for Spring Roll.~ The sweet savory taste from its vegetable filling and the crunchy fried texture will lift up your mood. In Indonesia we called it Lumpia. Ussually the filling would be glass noodle, carrot, beansprout, and other vegetables. But some certain variant will also use minced meat or even bamboo shots. Oh, and this is actually a kind of Dimsum. By the way, it's been pretty long since the last time I post drawing in Instagram. I've been busy with my plan for this year. My most favorite work in 2016 is the scenery of Brunch. I took pretty long time and had so many feelings when I work with this one.
