Maximum Overjew

If I have a reservation, it’s that the writers seem unsure if they want the show to be purely episodic or carry out multi-episode arcs. When they happen, they feel much more like a single story stretched out I’ve more time than linked individual chapters. Netflix’s binge-prone format makes this much less of a problem, but I still think the show would benefit from more flexibility in episode length. All in all, I’m delighted that Hilda has been confirmed for a second season, and look forward to how the writers will handle the transition from adapted comics to new material.

Netflix's Salt Fat Acid Heat is great, and not really a kind of cooking show I've seen before. The book it's based on is a sort of general how-to of the kind of instinctive, recipe-free cooking that people who grew up cooking develop naturally. The Netflix program isn't a how-to, and it isn't an Anthony-Bourdain style exploration. What it is is a surprisingly intimate showcase of what makes good food good, and of the peculiar obsession of the people who make it. The visuals and, particularly, the sounds of the program are intended less to evoke the experience of eating and more the experience of cooking. Pouring oil, slicing meat, and crumbling cheese are rendered with an acuity and emphasis that I've never seen in television, and rarely in film. Ultimately, Salt Fat Acid Heat is less of an educational experience and more of an aesthetic one, with the instructive component included only secondarily. I experienced ASMR - a phenomenon I had never felt and didn't really believe in - watching this program. For anyone with a love of food and cooking, I cannot recommend it highly enough.
