It’s been awhile since I’ve posted food pictures. 😍 this is a favorite from high school, and evolves the more I make it. Chicken broth, whisked eggs which are boiled in the broth to form the sponge-like consistency seen, assorted veggies from the fridge (this time: chard, carrot, baby bokchoy, leeks and scallions). Been thinking a lot lately... partly this past year, partly my future goals in the medical field (especially now that I’ve passed “Groundhog Day” with the anniversary of breaking my leg), and just kind of all about what it means to me to be in the medical field... kinda shared this on FB already but I woke up thinking about what I wrote for MA orientation about why I wanted to be a medical assistant. The second part of what I wrote wouldn’t format right, but the whole transcript is as follows: “I have spent a very large part of my life feeling like I would never find a place in this world. I certainly never thought that I would either succeed or go back to school. I have recently realized that school is NOT the point... I have spent a good 1/2 of summer ‘18 doing many things, but one of the most revolutionary and transcendental was volunteering at #occupyICE in Portland. Among other things, I felt a great sense of hopelessness and spent much of my time there wondering if going back to school was the best use of my time. But, school is not the point... I want to be a #medicalassistant because I love my fellow humans. My fellow women, immigrants, the chronically ill, disabled, my fellow comrades. I want to be a MA because eventually, I maybe want to be a nurse. I want to be there to help my comrades on the front lines. I want to be there for my friends who don’t understand what is happening to their bodies. I deeply wish to continue to emphasize with my fellow humanity. I want to be a MA because maybe, someday, I can help fight the injustices in our medical system. So that everyone can get the medication they need. So that they don’t have to fight the insurance companies, maybe. So that maybe at least ONE person can have someone advocate for them... even if they don’t know what it is they are struggling with. I want to be a MA because everyone deserves love and care in their lives. Because EVERYONE deserves to be healthy. I want to be a MA because I love this planet. Because I love humanity. Maybe my place in life isn’t as a nurse, maybe not as an MA, but it’s as a human. Week 4 done. Today marks the 1 year anniversary of breaking my leg. Not planning on any concerts this year. Gonna celebrate by doing some serious homework and preparing for the LCMA netting tomorrow evening, and thinking about conversations, questions and concerns for the advisory meeting for the MA program at LCC next week (which I am thankful that I was given the opportunity to represent the 2018-19 MA class once again after having to pull out last year. So it’s been awhile since I’ve dont a health update so WHY NOT. ❤️ *** I reached my GOAL WEIGHT! I very well may have been at weight for a little bit, but I am still super proud and SO HAPPY to be able to say that I finally hit 120lbs, which is my healthy low. Still hoping to get closer to 125, but doesn’t change the fact that I am in my healthy weight range. *** WOW it’s just a few days short of the 1 year anniversary to breaking my leg! Wow! Crazy. I have a lot of thoughts on that, which I won’t put all down right now. But I am still so grateful to the people who stuck by my side during that entire nightmare. Things would be a lot different without all of you. *** As with life, I feel like my gut is ever changing. And just like life, it seems to be on the up and up... and I can’t wait to see what food adventures open up to me these next few months!
