Old scientists get married and have a non-traditional Jewish and hillbilly wedding with mixed customs. Ford isn’t particularly religious but he wanted to carry on his family’s culture and tradition. I also like to think Stan is the one who performed the ceremony  (while tearing up and trying not to cry out of happiness and being proud of his bro). Dipper and Mabel are Ford’s best man/woman, and Tate is Fiddleford’s best man. The get married back in Gravity Falls and pretty much the whole town shows up!
