40 Calorie Sweet Deviled Eggs
From my chef skills, I present to you:
The perfect sweet deviled egg recipe I just came up with. It's 40 cals/half egg, so 80 per whole egg. And H O L Y S H I T you need this. Really, you do.
This recipe is for 8 eggs because it's all I had, but really you can scale it up or down for however many you want to make.
Ingredients:
-8 medium eggs (560cal)
-2 tbsp light mayo (70cal)
-1/2 tbsp sweet pickle relish (8cal)
-1/2 tbsp yellow mustard (0)
-salt + pepper
-Paprika (or other seasoning)
For the eggs: (for best results, use eggs that are as old as possible--at least a week or two old to allow for easy peeling)
1. Add eggs to large pot and fill with water until the waterline is about 1-2 inches above the eggs.
2. Heat over high heat until the water starts to boil, then cover and remove from heat.
3. Leave the eggs covered for 10 minutes to cook
4. Drain the water and stick the eggs in a bowl filled with ice water.
5. Allow the eggs to sit in the ice water until mostly cooled, but still warm to the touch.
6. Peel the eggs and cut them lengthwise, then gently roll the yolks out of each side and collect them in a bowl.
For the filling:
Combine the yolks, mayonnaise, mustard, relish, salt and pepper in the bowl, whipping it with a fork to fluff it.
Fill each half egg equally with filling. When finished, top with a light dusting of paprika.
Refrigerate for thirty minutes before serving.
