I can understand that people don't connect with him or find him boring. But reducing Choji to "he's eating and his insecurities revolve around food" is kind of wrong. There's more to Choji. He's defined by his loyalty, his desire to protect his friends, and his kindness. His main struggle is to reconcile those traits with fighting. This is particularly true when InoShikaCho have to fight edotensei Asuma. Also, he craves connections, as shown during the Sasuke Retrieval arc, and that is why he's so loyal to Shikamaru and defends him when someone doubts him. His Tsukuyomi dream also shows that he wants to find someone who would love him for who he is. I mean, if you find Karui more entertaining than Choji, that's alright. But it's not like she was better developed than him. What did Karui do in the manga that was particularly interesting?
