In my childhood, I had the habit of watching my mother cooking. It was very pleasant to smell the sweet smell of burnt sugar. On Sunday afternoon we used to listen to MPB while making banana cake together. Even today, as a well-made banana cake, I can hear Marisa Monte singing in the distance.
But the amazing thing is that no banana cake can have the exact taste of my memories. It is a set of factors. The smell. The music. The heat from the oven. The laughter and the love of mother. It brings feelings of peace, security, care and love. For me it will never be any cake. And yes a piece of my inner child.

3 eggs (egg whites and separate yolks)
1 tablespoon baking powder
1 teaspoon ground cinnamon
Cooking: 35mins> Ready in: 1 hour
• Preheat the oven to 180ºC and grease a 33cm shape.
•In a bowl, beat the margarine with the sugar until smooth. Then, add the yolks and mix.
•Put the flour and the yeast slowly, alternating with the milk.
•Beat the egg whites in another bowl until doubled in volume. Add gently to dough.
•Put the dough in the shape and spread the banana over it. Mix sugar with cinnamon and sprinkle over bananas.
•Bake and bake for 30-35 minutes, until passed on the stick test. Let cool before serving.
