Recipe: Mixed Bruschetta Plate 🥖🍄🟫🍅🥑
Duration: 30 min | Size: 1-2 portions | Difficulty: ★★☆☆☆
Ingredients:
Baguette (6 pieces, sliced)
Cherry tomatoes (6)
Avocado (1)
Button mushrooms (5, sliced)
Lime (1)
Burrata cheese (1 ball)
Garlic (3-4 cloves, peeled)
Butter (20 g)
Salt and pepper
Olive oil
Steps:
1. On a baking tray, brush the tomatoes, mushrooms and garlic with olive oil, season with salt and pepper, and put them in the oven for 15 min at 200°C.
2. In the meantime, make the guacamole by mashing the avocado with lime juice and mix it with some cut up raw tomatoes. Season with salt and pepper and put aside.
3. Once the vegetables are ready, take them out. Let the tomatoes and mushrooms cool down, but transfer the garlic to a small bowl. Mash the garlic with a fork, then add butter and mix to make garlic butter.
4. Warm the slices of baguette in the afterwarmth of the oven for 5 min. Take out the bread and spread home-made garlic butter on them.
5. Cut up the burrata and assemble it with tomatoes on a slice of bread. On another slice, add mushrooms. On a third slice, add the guacamole. Now, your bruschetta plate is ready to be served!

My friend had just moved into a new apartment with her boyfriend, so she invited me and another friend for full work day at her place.
I’d brought some berliner pastries to share while my friend made us some matcha. In the evening, we cooked some nice dinner together.

Ooops, have been forgetting to provide updates on my life. Well, as a part of dining week, I got lunch at Bjørn & Delfino with some friends. It was okay in my opinion. Tbh I don’t recall much of tasting the experience, lol. I mean it was good but nothing mind-blowing.
Also, for Halloween I bought some Danish cream puffs from Summerbird! They’re so adorable because they look like little ghosts. The double-layered chocolate was so nice and crunchy. I was a little worried about the taste of liquorice, but the flavour was quite subtle and blended extremely well with the chocolate. 🤩

I finished some Kuchipatchi keychains from airdry clay. These have been in the making for quite a while, but I finally got three of them ready and gifted one to my friend as thanks for supporting me while I was — I still am, but it feels less intense now — going through it.

Been hanging out with my closest friends a lot lately. I’ve been relying on them for support, and since they work at the same company, they welcome me to stay at their office to do some job search once in a while.
A few weeks ago, we ordered some Hobonichi stationery together, and I came to pick up my Tamagotchi-themed 2026 journal. It’s super cute, but now I need to spend some time contemplating exactly what I’d like to write or track in my new journal.
As we got off work, we went to eat meze at Sufra which was honestly so good! I could definitely go there again, and I think it’s even better than Mahalle. My favorite was the cauliflower dish! Next, we went to Bastard Café at Nørrebro to play the Azul boardgame, but I was honestly in such a deep food coma, I lost the game, lol. 🤓
Recipe: Orzo with Tomato & Feta Cheese 🍅
Duration: 25 min | Size: 4 portions | Difficulty: ★★☆☆☆
This is a bit of bittersweet recipe for me, because it’s one that my ex taught me (either way, I gifted him the cookbook that contains the recipe, lol). At times, I miss eating it, and it’s so damn delicious, so I need to write it down before I forget.
Ingredients:
Orzo (200 g)
Fresh spinach (50 g)
Garlic (3 cloves, chopped)
Chopped tomatoes (1 can)
Vegetable bouillon (1 cube)
Boiled water (400 mL)
Feta cheese (50 g)
Chili powder
Salt and pepper
Olive oil
Steps:
On medium heat, cook the orzo for about 3 min in a pan with a little olive oil. Then put the orzo aside in a bowl.
In the same pan and heat turned on still, pour in the chopped tomatoes with the garlic.
Next, dissolve the vegetable bouillon in 400 mL boiled water and add it to the pan with the tomatoes. Let it simmer for about 5 min.
Add in the orzo and add salt, pepper and some chili. Put a lid on, and stir every 5 min for a total of 15 min until it’s become the consistency of risotto.
While waiting, you can make the feta cheese topping by mixing it with chili powder and a bit of olive oil. Use a fork to crumble the feta.
After 15 min, add spinach, stir and let it cook for another 5 minutes with the lid on. Now, the dish is ready to served with feta sprinkled on top!

I only take payments via Ko-Fi (Stripe or PayPal option).
When paying, please note down an email that I can send the reading to and tick the “private message” box.
Adding a small description about yourself (3-10 sentences) is preferable to give the cards some context on who you are. However, this is not a necessary step if you don’t want to.
I’ll need to receive the payment before doing the reading.
I don’t do refunds, but I’m willing to redo readings if it doesn’t resonate. I’ll only do this once per reading, and I should get notified about this within 3 days of having sent your reading.
I reserve the right to cancel a reading at any time. In this case, I’ll issue you a full refund.

Saturday: September 13
It’s almost been two months post break-up with my ex, and last week I decided to tell him that I wanted to go no contact until at least September is over. I was experiencing a lot of anxiety not knowing if he’d reach out to me or not, and I didn’t see much progress in moving on which stressed me even more. The past few days, however, I almost feel like myself again. Obviously, I miss him at times, but it doesn’t feel as agonizing because deciding to go no contact makes it feel like I’m being somewhat in control.
Anyway, I spent the whole day with friends celebrating our birthdays together since they’re placed close to each other. We exchanged gifts, and I got some Summerbird Chocolate, blueberry tea from Sweden and a gift card to get a helix piercing! All of that stuffed in a mushroom-themed bag.
We ate lunch at The Pie Co. and we shared a savory pie (cauliflower and broccoli) and some dessert pie (banana caramel and apple pie). It was very delicious, but the banana caramel got a bit intense at the end. For dinner we tried restaurant Hanzo, and I got a red curry dish. It was good but tasted kind of sweet.

I’m not going to lie. Past month has been quite hectic. I’m no longer with my boyfriend, and I’ve been leaning on my friends a lot for support. It was a messy situation, but given the circumstances and timeline, I’ve been recovering pretty okay, and I’m proud of the way I handled things personally. (Though, I surely did have embarrassing moments at the heat of it, but it could’ve been way worse).
My friend invited me with her friends to restaurant Sanku after the breakup for some distraction. They had a hotpot-ish concept, but I don’t really remember what it tasted like as I could barely swallow down a bite, lmao. I probably should go again to form a second opinion without my feelings getting in the way.
A week later, I visited another friend at her workplace, and I got to eat some nice lunch at their fancy canteen! It was very delicious.

Recipe: Fettucine With Spinach Sauce & Salmon
Duration: 25 min | Size: 2 portions | Difficulty: ★★☆☆☆
This dish has been my easy go-to every day recipe for years now. I often skip the salmon if I’m lazy or replace the pasta with rice if I have rice leftover. If you don’t want to eat the salmon and want to go fully vegan, you can use vegetable bouillon instead for the sauce. However, I’ve tried both, and in this case, I definitely think that the chicken bouillon far surpasses the vegetable bouillon, but you can tweak this recipe however you’d like!
Ingredients:
Fresh spinach (200 g)
Cooking cream (350 mL)
Onion (1, chopped)
Garlic (2 cloves, chopped)
Lime (1)
Chicken bouillon (1/2 cube)
Spinach fettucine (250 g)
Salmon (2 pieces)
Salt and pepper
Oil
Steps:
With a little oil, fry the chopped onion and garlic in a pot until they’ve become semi-translucent.
Add spinach in gradually until they’ve become dark green and shrunken significantly.
Pour in the cooking cream and add the chicken bouillon.
Squeeze one lime in the sauce and taste with salt and pepper. Let the sauce cook for about 3-5 min.
In a clean pot, add salt and wait for it to boil. Now, add the fettucine pasta, and let cook for about 3 min before taking it out of the water.
In a separate pan, add oil and fry the pieces of salmon on each side until they’ve been cooked through — remember to season with salt and pepper while the meat is still raw on the pan.
Put the fettucine on a plate, add the sauce on top and salmon on the side. Voila, bon appetit!

Visited BonBon-Land for my friend’s birthday because that’s where she wanted to go. The tickets were a little expensive imo, but overall I think it was an enjoyable trip. I got to hang out with people who I hadn’t spoken to in a while. Also, I’m realizing that I don’t enjoy amusement parks the same way as I did when I was a child. When going on rides I get dizzy easily and the motion sickness factor is much more sensitive now as an adult.
Either way, we drove to restaurant Watami afterwards to get dinner. Surprisingly, the food appeared to much better in comparison to what I remembered from last time I was there. But I also didn’t order any raw salmon sushi this time and mostly got vegetarian dishes. Overall, it was a nice sunny day, though the animal mascots at BonBon-Land were kind of creepy. They reminded me of the ones from Five Nights at Freddy’s.

Had some busy days volunteering at Presidents Summit 2025 in Copenhagen. It was cool listening to presentations of experts from different fields and industries. I helped with catering and got to walk around a lot those two days the event was held. Honestly, I think it was really good for my mental and physical health to try something new and meet new people. I’ve been volunteering before at other events, but it had been years since.
At the end, there was an after party for the volunteers only, and pizza was served. I left early though to go see my boyfriend as he lives nearby. It was nice getting to talk to the other volunteers. There were some great teamwork in my team, and they all made it enjoyable for me to be there. It was cool.

I’m visiting Malmö a lot lately. Today, I went with my friends to hang out in the city and check out some shops. For lunch, we had tacos at Dirty Taco. 🌮 Their concept were quite unique as they offered a combination of Mexican and Korean food. I can definitely recommend their Sticky Chicken Tacos and their Nachos.
As snack, I’d brought some muffins that I’d baked the day before with some leftover rhubarbs. I was glad that they turned out fluffy and spongy, and my friends enjoyed them too.
After walking around for a while, it started to rain a little, so we took a break at a boardgame café to play Pandemic. Here, my friends ordered some chai latte which I got a sip of. It was delicious! As dinner time arrived, I was craving some good pomodoro pasta, so we went to an Italian restaurant called Da Zio Central. The food was great.

It’s been about two weeks since I ran out of conditioner, so I decided to go buy some. I wanted to try a new (luxury) brand so I went for Zenz. It was a bit pricey, ngl, but I rather spend money on a good conditioner than shampoo. 😅 Also, the brand is supposed to be clean in terms of ingredients. I tried the Zenz hair treatment product once many years ago, and I did really like it. For me, it’s a plus that a lot of their products don’t contain perfume.
I also got a heat spray from Maria Nila to provide some extra protection for my hair during the Summer months. It’s actually supposed to be applied before straightening or curling your hair, but Summers here in Denmark can get quite brutal. And if I do feel like adding some fresh scent, I can just spray a bit of this in my hair.
I also tried a waffle recipe using a new 3-in-1 toast machine that I’d bought. After hearing about the harms of PFAS, I spent all last week replacing a lot of my family’s cookware. Waffles turned out great, but I think I need to try it out a few times more before sharing a full recipe!

Attended a concert with Hugorm in Tivoli. I’ve never heard of the band, but my friend invited me to go, so I thought why not. I almost didn’t go because the weather had been weird all day — it’d been hailing and raining. Decided to go anyway, and it was a blast, which I didn’t really expect! Although, my friend’s mom had been really hyped about seeing Hugorm, lol.

Been wanting to learn how to knit lately, so I bought some different types of yarn to practice with. For that I’m just going to use some of my mom’s knitting tools, although, I might go buy my own later as she doesn’t have everything required for knitting a sweater. Also, got a bubble tea from Saigon 45 in Rødovre Centrum. Even though I want to try new flavors, I always end up ordering Blue Sky.
