🔆 💠 Wine marinated roast beef with homemade potato salad 🔆2𝟘/02/29/💠
Hello everyone out there ☺️ all of you, yes 😂 even those newcomers, who just came upon this blog post now by mistake or something. I want to make my sort of comeback to you as well as any of my followers, and step back into the world of blogging & Tumblr. You might be like what? who is this? 😄 I know that it has been a while, after undergoing some life changes I now feel I do have time for the things I do love again 💖🌸 You should always find some room for that. Especially on a leap day like this, which only happens once every four years. Learn to appreciate the little things and like me, enjoy them and whatever odd or unique may happen to you 😂☺️ That’s what counts to me at least.
Anyhow, I now come bringing this food I recently made. It’s a really delicious potato salad which I highly recommend to anyone that’s trying to loose any weight, is lacking inspiration on a hectic day or simply wants to stay on the health track 😋
This is very simple. Only a few ingredients are required, which I believe every health oriented person has laying in their fridges ☺︎
No.1 are of course the roast beef, for this occasion I chose the wine marinated. I somehow finds this kind to have a bit nicer taste than the regular one.
1. 3 large stalks of celery
3. Red balsamic vinegar ( for the coloration and somewhat nice refaction of tastes )
4. A couple of potatoes ( 2-4 ) ( peeled )
8. Low fat yogurt or sour cream
Start by heating up a pan with a tbsp of olive oil or any other oil of your choosing, I either go with this or coconut oil. These are my two personal favorites.
Next thing you do is to chop the celery in small thin pieces and fry for about 5-10 minutes. Keep a plate ready to transfer them onto when done. Do the same with the chive 😜 except the frying part.
Slice onions in small slices and then continue with the potatoes, peel and boil for 10 minutes. Dice in pieces like cubes, grab a bowl and start putting them in along with the celery and chopped dill.
Add in the mustard, yogurt with that and mix everything together with a few sprinkles of the balsamic vinegar for that extraordinary taste. I’d say rather sweet and kind of sour in a way.
