Lemon Poppy Seed Cake
Decided to experiment in the kitchen. I LOVE lemon! It's such a refreshing flavor. The cake turned out delicious and will definitely be made again.
1 1/4 Cup flour
1 tsp baking powder
Pinch of salt
2 sticks (1 cup) softened butter
3/4 Cup sugar
2 large eggs
Zest and juice of one lemon
2 tbsp poppy seeds
Preheat oven to 375 degrees F
Cream butter and sugar
Beat eggs, lemon juice, and zest into butter and sugar
In a separate bowl, whisk baking powder and flour
Slowly incorporate dry and wet ingredients
Pour into buttered/floured pan and bake for 30 minutes
I made a simple lemon glaze with lemon juice, water, and powdered sugar.

Lunch time!
Pan seared tilapia and steamed veggies. One of my favorite quick, go to recipes. The fish takes less than 10 minutes to prep/cook and it's quite healthy.
Season fish with salt, pepper, garlic powder, and paprika
Lightly coat with flour
Pan sear fish in a couple tablespoons of olive oil - 3 min/side
I served mine with steamed veggies tossed in rice wine vinegar. Yum!
