I was reminded today to never stop creating in the sweetest of ways and how what you put out to the world can mean something to someone. For me, that is my love for creating delicious meals and fun DIYs. I know I’ve said this before.. but creating really does bring me so much joy. But lately I’ve been discouraged that I haven’t been creating much bc of how busy it’s been, or in a creative rut, or my mental health hasn’t exactly been at it’s peak lately (hello 2020). Post-workout berry banana kiwi smoothie 🍓🥝 I had a ton of berries left over from making cake the other day. Thought I’d use them to make my post-workout recovery smoothie. Strawberry Basil Crostini 🍓 My crostini obsession still stands. This am I made a strawberry basil crostini using my homemade artisan bread, the last bit of my @greekgodsyogurt mixed with Madagascar Vanilla @vitalproteins collagen, topped with @mothersmarkets strawberries, basil, thyme, @traderjoes cinnamon, and a drizzle of @pedrosranch honey that I got at the @orangehomegrown farmer’s market. Peach Burrata Prosciutto Salad 🍑 Last week I showed you the grilling fest I had with some friends. Today, I’m going to show you one of the most simplest mind-blowing recipes I made that day. The thought of these ingredients separately already makes your mouth water. Not to mention, sweet Jesus graced us with burrata cheese. I can’t put into words how delicious burrata is. Before this dinner, I picked up peaches and basil at the @orangehomegrown farmers market. Then, got the rest of the ingredients at @trad. For this gathering, I grilled the peaches which is a great way to get them soft, toasty, and juicy, but they’re delicious either way. This summer recipe is one of those grilling must-haves that can be simply but elegantly presented. The plate I used for this is from @crateandbarrel. Simple Cajun shrimp salad with pico de Gallo, cucumbers, avocados, lettuce, and salt and peppa. This is my go-to shrimp each and every time bc each and every time it never fails me. Throw shrimp and chopped garlic on buttered skillet, Chili powder, and s and p. Flip and do the same thing again until shrimp is cooked all the way through. Tamale making night 🌽🌶 I very much adapted my love for cooking from my family. Most of my family from my mom side are incredible cooks. When my brother started dating his now wife, she brought her Mexican heritage into our family and taught us what traditional Mexican food taste like, at least the way her family taught her in Guadalajara. This past weekend, they had us over for a lil tamale making class. We made a green Chile cheese tamale, a salsa verde chicken tamale, and a red sauce pork tamale. My fave was the cheese! Here’s what I learned: - Tamales take 5-6 hours to prepare and cook, one hell of a long time but worth it - Homemade tamales can be made with more filling and less masa. Different from what you get at typical grocery stores/ restaurants - I’ve perfected finding the shiny side of the corn husks. Another Sunday night SD din before going back to work, but this time, we took it to the grill. It was the most magical night under the stars watching Sleepless in Seattle. You can’t go wrong with some Tom Hanks and Meg Ryan. Here’s what was on our menu: - Grilled steaks and homemade @eyeswoon chimichurri - Rolls - Quinoa salad - Grilled Peach burrata salad - Grilled shishito peppers - Grilled asparagus and brussel sprouts We kept it simple and used evoo, garlic salt, and peppa.
