"I have a few, let's see..."
As swift as wind, Mystia retrieved her precious notebook from her apron pocket and flipped it open. Even though it had only been three-and-a-half months since she started putting it to regular use, the chef's notebook was evidently well-loved — its pages frayed and smelling slightly of cooking oil, with small pieces of coloured paper poking out between the pages to quickly flit from section to section.
"Today's special-just-for-Kyouko menu isssss-" Mystia drew out her words as she ran to fetch the dishes from the warming cabinet in the back, "'risotto' with scarlet tea!"
She finished her sentence by placing a ceramic plate on the table in front of her friend, which was full of what appeared to be rice cooked in stock, topped with sautéed bamboo shoots, sliced mushrooms, and diced fatty pork. Creamy and chewy instead of soft and fluffy, this risotto was noticeably different from other rice dishes normally seen in Gensokyo. Next to it, Mystia set down a teapot and a Western-style teacup, pouring into the latter a fragrant red tea that smelled citrusy. To be more specific, lemon and bergamot.
"Patchouli shared this recipe with me yesterday, she said it's a dish from the Outside World," the sparrow chirped, eager to share her cooking as always. "First, fry bamboo shoot and mushroom in butter. Then add uncooked rice - don't forget to not wash it - and lightly toast. Finally, transfer to a steamer, pour in mushroom stock, and steam until most of the stock is absorbed, occasionally stirring. Add additional toppings if desired."
It was so very complicated compared to the grilled lamprey and onigiri the two of them were serving less than half a year ago, yet Mystia's dedication to her craft didn't falter. If anything, the little sparrow rose to meet the challenge.
"Oh, say, Kyouko, how good at you at flipping a frying pan? I'm supposed to do that to cook 'pancakes', but so far I've just made a string of messes."
Frankly, those round, sweet pastries were her greatest enemy. Cooking steak was easy-peasy compared to achieving a perfectly circular, evenly golden-brown, fluffy photogenic pancake. Three times if her customers wanted a stack, which was why she'd left them off the menu completely so far.
