I saw someone suggest cannibalism based on her line at the start of Episode 3 "Did you like, eat a person?" while trying to figure out why Immy had such a long sentence, but I'd like to point out in that same scene the worst crime Kip could think of was Grand Larceny and Arson (Theft and Destruction of Property), both incredibly petty crimes with at most a year of jail time in most states

I think it's much more likely the take here is the Incarceration program is (surprise surprise) unbalanced when comparing the Crime to the Punishment and that everyone in our store is here for Petty Crimes, such as stealing food ala Aladdin.

With the exception of Immy, who appears to be here not because of a Crime she Did, but because she herself is a Crime, or has been convinced as such

I assume her poem had some sore out Soul/Sole wordplay to it based on where her sticker is. This combined with the brief flash of Immy with Angel Wings during Neurovision in Episode 2 I think there's a chance of Immy's "crime" being more Spiritual/Catholic Sin styled than an actual Legal Crime.
