Potato and Malt by Chef Hans Valimaki - Chez Dominique, Finland

THIS WAS MY FAVOURITE. Absolutely love it. My first desert dish of the day. Its sea buckthorn potato ice cream with malt. The ice cream has this hard shell around it, it tasted like potato. It was a sick sweetening potato taste it was just right. The shell was more savoury and the ice cream was the sweet part. To add texture to the dish was the grounded biscuit things and tiny bits of herbs around it. Im craving for more now! I love food that surprise me.

I went to Savour, a gourmet food festival that was held in Singapore. I wasnt too impressed with the overall festival as I was when I went to London Taste last year. I found the food much more expensive maybe cause these were chefs from Europe and the ingredients had to be flown in because they could not be sourced here. But usually i would not mind paying a certain amount of money for good quality food, this time the standards were not high. I felt I was over paying most of the time. A lot of the dishes were hit and miss maybe I was just having bad luck that day.

Anyways here was the first dish of the day by Chef Emmanuel Stroobant from St.Pierre in Singapore.

Menage-A-Trois. Scallop mousse, green tea smoked salmon and soy mirin marinated ikura. Sous-vide ocean trout, steamed bulot, micro basil and rouille dressing. Sushi rice croquette, spanner crab , salmon sashimi and edamame puree.

For the first dish of the day the fish was fresh but it was OKAY for $15. I found the ocean trout boring, but the scallop mousse and croquette were good. I liked how the overall dish had different textures, it made it more interesting and enjoyable.

Unagi Sushi Done Two Ways

The first unagi was the normal unagi with sauce, the other was interesting it was salted with some lemon zest. Never had unagi that way before, refreshing and interesting.
