I would personally be an office worker and have a fomantis that I had to order from a specialized breeder overseas… I paid so much for the egg shipping + live hatch insurance. she is such a picky little beast and I spent my entire paycheck for 6 months to build her a tropical hothouse for the required levels of humidity and temperature. I am on 13 different exotic plant pokemon forums where we talk about our fertilizer mixes and what we’ve been doing to maintain the coloration of our pokemon’s leaves. I am the pokemon equivalent of a serious aquarium hobbyist

Honestly I'd probably have my favorite pokemon (but the starter version) which is popplio! Mainly cause then we could prank people, but the pokemon is diverse when actually fighting.
