The reason we see so much pink architecture in Jaipur today is that, in 1876, Maharaja Sawai Ram Singh (the King of Jaipur essentially) painted many buildings pink to entice Queen Victoria and Prince Albert to visit his city.
He specifically used pink, as it was seen as a the colour of hospitality.
Therefore, the nickname the "Pink City" of Rajasthan, reflects the strong hospitality in India that existed in years past and pervades into the mindsets of modern Indians.
