Here we have one of the best desserts we’ve ever made!  This Vegan Apple Caramel Cake is so delicious that we declare it Fit For The Gods!  I’m serious, it’s that good.  It’s great for breakfast, dessert, or a sweet snack.  We can’t stop making and eating this cake.

Guess what, this amazing cake is incredibly easy to make too!  It requires canned apple pie filling, and canned coconut milk.  These are pretty unique ingredients to use in a cake, but it works SO WELL, and really simplifies the recipe.  We found out you can actually use other pie fillings in this cake too!  We made it with cherry pie filling and it was tremendous!  I think you could use just about any canned pie filling in this cake.

Caramel sauce goes on top of the cake.  This caramel sauce is super simple to make, but it’s just perfect.  The caramel sauce is made of just 4 simple ingredients:  melted vegan butter, pure maple syrup, vanilla extract, and dates.  Just blend it up, and you have it!

To make this super-satisfying caramel apple cake, first we make 3 flax eggs.  Then in a large bowl mix up the baking soda, flour, cinnamon, and salt.  Then we stir in the apple pie filling, canned coconut milk, sugar, vinegar, vanilla, and flax eggs. We don’t even need a mixer, a wooden spoon will do just fine.  Pour the batter into a greased glass baking dish and bake at 350F for 50 minutes.  If you’re using a metal baking dish you can bake it at 375F.  Check it with a toothpick in the center of the cake, once it comes out clean it’s done.  Spread the caramel sauce on top and enjoy the cake warm or cold.  For bonus points serve it with some vegan vanilla ice cream!

A Vegan Caramel Apple Cake Recipe that is very easy to make. The cake is topped off with an easy and delicious caramel sauce. Unique ingredients like canned pie filling and canned coconut milk are used to simplify this yummy cake. It’s so good that we declare it fit for the gods! Eat it for breakfast, dessert, or a sweet snack. Cake Ingredients3 Tbsp ground flaxseed ((+½ cup water to make flax eggs))3 cups flour½ tsp cinnamon ((optional))½ tsp salt2 tsp baking soda20 oz canned apple pie filling ((works with other pie fillings too!))1 cup organic sugar ((or brown sugar))2 tsp vinegar½ tsp vanilla extract1 can full fat coconut milk ((13.5 oz))Caramel Sauce Ingredients¼ cup pure maple syrup¼ cup melted coconut butter ((or other melted vegan butter))½ tsp vanilla extract6 pitted dates (deglet noor) ((or 3-4 medjool dates)) Preheat oven to 350°F, and grease a 13x9 glass baking dish. (If you want to use a metal dish then preheat to 375°F)In a medium bowl make 3 flax eggs by combining 3 Tbsp ground flax with ½ cup of water. Stir and let sit for at least 5 minutes.In a large mixing bowl combine: 2 tsp baking soda, 3 cups flour, ½ tsp cinnamon (optional), and ½ tsp salt. Stir it up and remove any lumps.Add all of the other cake ingredients into the large bowl with the dry ingredients: canned pie filling, 1 cup sugar, 2 tsp vinegar, ½ tsp vanilla, can of coconut milk, and the flax eggs. Stir it up well with a wooden spoon.Spread the batter evenly onto the greased baking dish. Bake at 350°F for 50 minutes or until a toothpick comes out clean.While the cake is baking, you can make the caramel sauce. Combine all sauce ingredients in a food processor or blender and mix until smooth.After the cake is removed and cooled a bit you can spread or drizzle the caramel sauce on top of the cake. Enjoy the cake warm or cold, and perhaps with some vanilla vegan ice cream!
