I made a tofu benedict for breakfast yesterday. I air fried a quarter of a block of tofu after coating it in nutritional yeast, black pepper, paprika, garlic, powder, onion powder, cumin, and turmeric, and toasted an english muffin. I also made a fake hollandaise sauce by mixing hummus, water, paprika, and black pepper. I topped it with a few slices of avocado and it was so delicious! It’s been a little hectic lately, but I’m back! We’re in self-quarantine and isolating ourselves. Luckily Animal Crossing came out today so I’ll be playing that non-stop, and we’re adopting a puppy! We picked up some groceries at Kroger tonight and found a ton of vegan food from the Simple Truth Organic brand. DJ made black bean, corn, kale, and chickpea enchiladas a few weeks ago. 😍 We froze a bunch of them and I ate two for lunch today.
