Ingredients: 1 cup all-purpose flour. 1/2 cup unsweetened cocoa powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup unsalted butter, softened. 1/2 cup granulated sugar. 1/2 cup packed brown sugar. 1 large egg. 1 teaspoon vanilla extract. 1/2 cup milk. 1 cup chocolate chips. 12 marshmallows.
Instructions: Preheat your oven to 350F 175C and line a baking sheet with parchment paper. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract to the butter-sugar mixture, and mix until well combined. Gradually add the dry ingredient mixture to the wet ingredients, alternating with the milk. Mix until just combined. Stir in the chocolate chips. Drop spoonfuls of the dough onto the prepared baking sheet, leaving enough space between each cookie. Bake the cookies for 10-12 minutes or until the edges are set. While the cookies are baking, cut the marshmallows in half. Remove the baking sheet from the oven and press a marshmallow half, cut side down, onto the center of each cookie. Return the baking sheet to the oven and continue baking for an additional 2-3 minutes, or until the marshmallows are slightly toasted and puffed. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
