this is a very good question, especially since there's many possible choices with unique consequences, but I feel like my choice wouldn't make sense to some people at first so hear me out: Padre. Damaso. YESYES I know I know, the outrage! The terror! what sort of person do you have to be to choose damaso?? however just let me hold your hand for this ok. damaso is the driving point as to why most of the conflict and event happen in the first place is it not? he's not responsible for every single happening but the ones he's responsible for are... pretty major factors of the story if you ask me so being reborn as damaso, knowing all the information, i'd change my decisions! and as a result, most of Noli Me Tangere will probably never happen! No Maria Clara means Crisostomo would've either been engaged to another mestiza or he would've found his own love while in Europe. No going against Don Rafael would mean Ibarra would've been able to meet his dad again even after studying in Europe for 7 years. Very, very, simple decisions.

since we can assume ibarra touches grass a lot during the 7 years of his travels in europe, it's reasonable for him to be slightly tan whilst still retaining his mestizo skintone which is a bit white, as for simoun, bro spent his time in havana in america so obviously he would've been very tan at that point (hence why he was named cardinal moreno), but idk why some adaptations like afc refuse to give him melanin 😭🙏
