Allergies are not in any way actually taken seriously by most people (common stories include anaphylaxis patients being given oral epi and sent back to the ER lobby to stabilize without monitoring and "friends/family"/restaurant staff adding ingredients with known allergens just to try to call people with allergies on whatever bluff they think it is) and the current approach to following regulations on food allergens is to just cram whatever allergens you need to watch for into the food anyway so you can print a warning for it on the box and be done with it instead of actually taking the time, care, and YES money to properly prevent cross-contamination.

I deal with a severe soy allergy every day that causes full body inflammation if I ingest even a small amount of soybean oil, which is legally considered "safe" for people with allergies, and it's pretty common knowledge that soy (at least oil, but normally soy protein as well) is in EVERYTHING these days, even if people aren't aware of the greed and laziness that motivate that change. And most doctors don't even consider my reaction an allergy at all unless it causes anaphylaxis symptoms (which it does with "high" enough amounts of any soy product).

And I actually cannot afford to accommodate that allergy, because allergen free food is expensive and I'm at the mercy of food panties right now anyway, so I deal with DAILY severe gastrointestinal distress including gastroparesis, nausea and vomiting, and IBS-like symptoms, just as a default. And this is a very common experience for people with allergies/intolerances in multiple tax brackets. It's so common people joke about just not caring if they're allergic/intolerant to a food because it's good enough to eat anyway, and it's an almost universal sentiment among people with food restrictions.
