How to: bake κουλουράκια "koulourakia" Greek biscuits and drink wine with Sofia
EXCHANGE three was lead by Sofia, who taught us how to bake classic Greek biscuits flavoured with orange, lemon, cinnamon and brandy.
Be the talk of the town by baking some yourself by following the simple recipe below:
What you need:
1½ cups of rapeseed oil
2 cups of sugar
zest of 2 oranges and 1 lemon
½ cup of orange juice
½ cup of lemon juice
1 shot of brandy (Greek measurement, which turns out to be two shots)
cinnamon cloves
1 teaspoon of baking soda
½ teaspoon of bicarb of soda
1kg of flour
Ok, good. Let's go.
Mix the oil and the sugar together in a big bowl and then add the zest, cinnamon, brandy and cloves. If you've done it right it should have the look and consistency of vomit (but not the taste. If yours does, then you have gone wrong somewhere).
In a separate container add the baking soda and bicarb of soda to the orange and lemon juice to create a bubbling jacuzzi of citrus goodness.
Chuck this in the big bowl and mix it well with a wooden spoon adding flour bit by bit until it can be kneaded by hand and does not stick. You might not need to use all the flour.
Now comes the fun bit, shape the dough into mouth-sized biscuits and blast them in the oven for a while at a certain temperature.
The classic way to present them is twirly plaids, but you can break the mould and make whatever the flip you want. Go on, express yourself through the dough. We don't judge here.

How to: bake a fancy filled focaccia and drink Cava with Cass and Jim
Here's one I made earlier...
While we're between EXCHANGES I though I'd blog about whatever I've been doing to keep myself amused. This time you get to hear all about the salami, jarlsberg and olive filled focaccia bread I made with our very own Cassandra.
Here's what you need:
500g of strong white bread flour
2 tsp salt
2 sachets dried easy blend yeast
2 tbsp olive oil
400ml cold water
olive oil, for drizzling
fine sea salt
fillings of your choice
Ok ready?
Chuck the flour, salt, yeast, olive oil and about three quarters of the water into a large bowl. Squidge it together with your hands to make a dough, slowly adding the remaining water, for about 5 minutes until it looks like this:
You can do some stretching and folding at this part, after oiling up. But then get back to kneading your dough.
Once it's been well kneaded- for like 5-10 minutes- give it a rest and let it double in size in a covered bowl. We didn't have cling film so we freestyled and used a wet kitchen towel and left it for about as long as it takes to walk into town to buy some Cava... When we came back, voila!
Split this big fatty into two parts and flatten onto lined and greased baking trays, letting them rest again for about the length of an episode of Game of Thrones (if you want to follow our exact recipe, we watched Series three episode two).
Sandwich time! Put your fillings of choice on one of the slabs and then place the other one on top, making sure to give the authentic dimpled appearance by prodding it with your finger.
Drizzle with oil, sea salt and rosemary and stick in the oven at 220C for about 20 minutes.
Take it out and eat it.
Or, if it tastes a bit crap like ours did, slice it into nice squares and take it to an event where other people will have to eat it instead.
