My comments:
- Frozen corn worked perfectly for me. I just gave it a couple extra minutes on the stove to char up a little more. Fresh corn would likely taste better, though.
- Donāt skip the toasted pumpkin seeds! They give so much to the dish!
- Try half as much dressing next time. Also try adding a can of black beans.
- Put the whole jalapeƱo in if you like heat. I did, and itās perfectly, cozily spicy.
