That was actually addressed in the special edition film commentary with the creators. They purposely drew Mulan’s face to be more traditionally feminine when she was outwardly presenting as a woman and more masculine when she was disguised as Ping. I believe it was a way of showing visually how Mulan adapted into these roles and the contrast between them. A sort of blending in with the army when she disguised herself. Although I’m not exactly 100% sure of that, as I haven’t watched the commentary in years. I do know for certain that the jawline difference was intentional.
