These grilled porcupine meatballs are a delicious twist on a classic recipe, with a smoky barbecue flavor and a perfect char from the grill. They're easy to make and even more fun to eat!
Ingredients: 1 lb ground beef. 1/2 cup breadcrumbs. 1/4 cup grated Parmesan cheese. 1/4 cup finely chopped onion. 1/4 cup finely chopped parsley. 1 clove garlic, minced. 1 egg, beaten. Salt and pepper to taste. 1 cup barbecue sauce.
Instructions: Preheat the grill to medium-high heat. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, chopped onion, chopped parsley, minced garlic, beaten egg, salt, and pepper. Mix well. Form the mixture into meatballs, about 1 inch in diameter. Thread the meatballs onto skewers, leaving space between each one. Place the skewers on the preheated grill and cook for 10-12 minutes, turning occasionally, until the meatballs are cooked through and have a nice char. During the last 5 minutes of grilling, baste the meatballs with barbecue sauce, turning them to ensure even coating. Remove the skewers from the grill and let the meatballs rest for a few minutes before serving. Serve the grilled porcupine meatballs with additional barbecue sauce for dipping.
