With its sweet and sour flavors, this Honey Mustard Poppyseed Salad is a great way to start the day or end the night.
Ingredients: 1/4 cup honey. 2 tablespoons Dijon mustard. 2 tablespoons white wine vinegar. 1/4 cup mayonnaise. 2 tablespoons poppy seeds. Salt and pepper to taste. 6 cups mixed salad greens. 1 cup cherry tomatoes, halved. 1/2 cup sliced red onion. 1/2 cup sliced almonds, toasted. 1/4 cup crumbled feta cheese.
Instructions: To make the dressing, mix honey, Dijon mustard, white wine vinegar, mayonnaise, poppy seeds, salt, and pepper in a small bowl with a whisk. Put the mixed salad greens, cherry tomatoes, sliced red onion, and toasted almond slices in a large salad bowl. Add the honey mustard poppyseed dressing to the salad and mix it all together. Pour the dressing over the salad and gently toss it to coat everything. On top of the salad, crumble some feta cheese. Serve right away and enjoy!
