Wanted to finish more of my wips first but my mum bought me thos gorgeous yarn and I need to cast on now

Is there a good way to design double sided double knitting projects? I've been using a spreadsheet and it's working, but at what cost (maybe I'm just not good at spreadsheets). I also have done the charts on paper and could cut them into strips and glue them back together but that doesn't sound too great either
