Kabura-zushi~

Kabura-zushi→ A kind of Sushi. By cutting around 2 cm of turnip and preserve it with salt, cutting the midmost of the turnip, and put it in between of Mackerel or Amber Jack, and with the fermented yeast (?)

In Toyama, I always eat Kabura-zushi with Mackerel

The sweetness of the turnip, the saltiness, with the taste of the mackerel and the sourness of the fermented yeast... Were mixed with exquisite balance... It is the taste that nobody knows
