I’ll have you know my burrito making is a art; a CRAFT handed down to me by my father which was handed down by his father and his father before him. we been following this for the past millennia. which can be called a technique based on the sheer history of it should not be looked down upon. The layering of the exquisite burrito much like the layering of the earth allows you to take each bite and have it be an EXPERIENCE not the standard burrito seating that everyone would expect. If I had the audacity to deliver a standard plain burrito how would I be able to sleep at night? Knowing that I have purposefully wronged someone in my area of excellence? The "Cilantro Cavern" as you would have it is a form of trial not to be taken lightly by non burrito connoisseurs like yourself. I would go on but frankly, my customer, i dont give a damn.

Here is how I did that carpet thing with the marimo moss as you can see I just pulled it apart and u rolled it then smashed them between my two palms together . Once I put it in the water it sank and I anchor a part of it. No one asked but I really love the way marimo looks as a carpet but If you were to do a big carpet of it you will have to glue it or tie it to something . Online they sell marimo carpets on some kind of mesh though (:
