Einkorn Sourdough (Pane di Farro Monococcum)

Gersterbrot is a speciality of Hannover and surrounding areas in Niedersachsen, Northern Germany. What may be a reference to Gerste (barley) is actually a baker’s term. It means to expose the dough to the flames of a special oven - the Gersterofen. There’s only one company left in Germany that manufactures this kind of oven, so the production of this bread may be a decaying art. Try it while it lasts - it’s great fresh and also very good toasted a few days later. It has a unique flavor and is absolutely delicious.
