While an egg is nothing but something that is waiting to be something else, a cucumber is a thing of independent existence outside of pickling. A cucumber that never becomes a pickle is only a tragedy if your only concern is pickles, but from the cucumber's point of view it's simply existing as a cucumber- no matter how long a person takes to decide that transition is the right fit for them, their lives, feelings, and very existence are still meaningful as they currently are. A cucumber that never gets pickled still has infinite possibilities, whereas an egg only has two options: hatch or rot

Pickling is a deliberate process. You can't just take a cucumber and turn it into a pickle, in the same way that a person must go through self-reflection and thought before deciding that transition is their best option. For some people this process is very fast and for others it takes a lot of time, just like there's lots of different pickling processes. By the way the egg metaphor actually does hold up somewhat from this angle- an egg can only hatch when it's meant to, and if you try to force it to hatch sooner what you get is a dead bird :)
