Ingredients: 1 gluten-free submarine sandwich roll. 1 cup vegan deli slices such as smoked tofu or tempeh. 1/2 cup shredded vegan cheese. 1/4 cup sliced red onion. 1/4 cup sliced tomato. 1/4 cup shredded lettuce. 2 tablespoons vegan mayonnaise. 1 tablespoon Dijon mustard. 1 teaspoon liquid smoke. Salt and pepper to taste.
Instructions: Preheat your oven to 350F 175C. Slice the submarine roll horizontally, but not all the way through. Layer the vegan deli slices, shredded cheese, red onion, and tomato inside the roll. Spread vegan mayonnaise and Dijon mustard on the top half of the roll. Drizzle liquid smoke over the fillings. Season with salt and pepper to taste. Wrap the sandwich tightly in aluminum foil. Place the wrapped sandwich in the preheated oven and bake for 10-15 minutes, or until heated through and cheese is melted. Remove from the oven, unwrap, and top with shredded lettuce. Serve immediately and enjoy!
