It’s probably always my bad.
It was like 100 degrees yesterday and I was Very Tired, but I did finish my 'cream!
I made a ganache and cut it into squares super well (this is a lie and I'm lucky I didn't stab myself with the way I was trying to cut it lol), decorated my cartons (I'm bad with that sort of art so it's good practice), churned it (my roommate has a fancy ice cream machine now so I benefit :) ), then layered it with the mix-ins!
I think it turned out pretty tasty! When it was freshly churned it tasted and felt like the inside of a charred marshmallow, which was neat. Next time I'd probably toast them a little darker, but this was definitely good!
Here's uhhhh a pastebin with my finalish recipe. I have so many ice cream recipes, I should probably compile them all and make a nice booklet or something someday...

Making ice cream step one: realize you're out of milk and have to go to the store :(

I wanted to get them a lil dark, but I probably wimped out too soon. Charred flavor is important for roasted marshmallows vov
While those were cookin, I threw together my base. When making ice creams, usually I start with the Salt and Straw base recipe (I'm an Oregonian, what can I say).
In this case I cut in half the amount of sugar and corn syrup - I figure that's pretty much all a marshmallow is, and I'm going to be adding a bunch of those to the base so...
I appreciate that the Salt and Straw base is eggless - there's nothing wrong with an eggy cream, but I enjoy the security of never having to worry about scrambling my custard.
I also like that they use some fun Science Stuff in their recipe. Probably the most notably weird one is xanthan gum. It's a thickening agent/emulsifier that helps your ice cream weather fluctuations in temperature, which in the end means you wind up with a better texture when churned and that the ice cream lasts longer in the freezer.
Some people are really opposed to "chemical additives" or whatever (then there's the sort of people who are like 'if you can't pronounce it you shouldn't cook with it'), but that's lame and comes from fear mongering
I added the milk and simmered it for a while, then threw in those marshmallows and the cream and whisked it all up. I'm not stressing too much about the mallow chunks - I figure either they'll melt into it as it chills OR I'll wind up with some roasted marshmallow chunks in the churned ice cream. (Both of those are Good Actually)
Now I suppose I'll let it hang out in the fridge for a day while I contemplate my mix-ins situation. I'm thinking probably little chocolate ganache cubes (I'm doing a smores flavor if that wasn't apparent, and I figure smooth chocolate ganache is the closest thing to melty chocolate bars in this scenario) and some crushed graham cracker? (maybe I'll do both some crushed and some bigger bits :thinking emoji:)
