These healthy breakfast burritos are loaded with nutritious ingredients like sweet potatoes, black beans, and avocados. They are perfect for a quick and filling breakfast to kickstart your day with a burst of flavor and energy.
Ingredients: 2 medium sweet potatoes, peeled and diced. 1 cup cooked black beans. 2 ripe avocados, sliced. 6 whole-grain tortillas. 1/2 cup diced red bell pepper. 1/2 cup diced red onion. 1/2 cup chopped fresh cilantro. 1/2 teaspoon ground cumin. 1/2 teaspoon chili powder. Salt and pepper to taste. Cooking spray or olive oil for cooking.
Instructions: Start by heating the oven to 400F 200C. Mix the sweet potatoes into small pieces and put them on a baking sheet. Add olive oil and then cumin, chili powder, salt, and pepper. Add toss to cover evenly. Put the sweet potatoes in an oven that has already been heated and roast them for 20 to 25 minutes, or until they are soft and slightly crispy. Get a skillet hot over medium-low heat and add a little cooking spray or olive oil. This will be used while the sweet potatoes roast. Cut up the red onion and red bell pepper and add them to the pan. Saut them for about 5 to 7 minutes, or until they get soft. Take the sweet potatoes out of the oven and set them aside when they're done. Put the whole-grain tortillas in the oven for a few minutes or heat them up in a clean pan over medium-low heat for 30 seconds on each side. Put some roasted sweet potatoes, black beans, sauted red onion and bell pepper, sliced avocado, and fresh cilantro on each tortilla to make the burritos. Before you roll the tortilla up tight to make a burrito, fold the sides in. You can eat it right away or wrap it in foil and take it with you for breakfast on the go.
