I think it's very interesting that Italians speak with a ton of hand gestures. When I see people speaking like that, I stare at them for a few seconds to determine whether it's sign language or just Italians in the wild😁.

When the weather cools down in my area, I'll bake more (I love focaccia and pizza bianca) and show you the photos.

Ciao Jamie, for me it's mostly...how do I say it... practical to use hand gestures. A kitchen can be very loud and I need to be able to communicate with my staff. Is very simple. And it also is about passion. People from Italy are very passionate!

Tagliatelle alla Bolognese

Hand-rolled ribbons of long, flat pasta tossed in a ragù sauce made with meat, wine, and tomatoes. Topped with a generous sprinkling of freshly grated Parmigiano-Reggiano cheese.

I know this is a lot to ask, so please do not feel obligated to answer. When you get a chance, could you please take a look at my focaccia and see whether it's passable? Any pointers for improvement? I love fermentation, heehee. Thank you.

It's difficult to see on the fotos but a good focaccia should be light and sponge-like to soak up every last bit of olive oil or pasta sauce from your plate. To do this, you need to make a really wet dough - the less flour the better.
