I like to think that Simon gets so used to Grace and Rocky being a single unit on the Hail Mary that he absolutely cannot fathom a world where they weren't always together. Like. That's his buddy GraceRocky. They're a weird human rock alien amalgamation, much nicer than the blood eel made of people that tried to kill him, and every time Rocky mentions Adrian, it pings in his head as GraceRocky's mate, Adrian, instead of just Rocky's mate, Adrian, that Grace hasn't even met yet.
