Sorbet was obviously awake while getting sliced up by Cioccolata, so it's safe to assume that his stand didn't have a humanoid form nor was it fit for fighting. I think it had something to do with shape shifting (think Clayface from DC comics) parts of his body.
And I have proof that this could be it.
The proof is................... His legs. Mostly his height.

Now this could be because of accidental inconsistency because nobody in the JoJo editor's room expected us to get so attached to these 2 and they didn't think we'd notice

I'm telling y'all, Sorbet's entire existence revolved around Gelato. Everything he did was to make him happy and that reflected into his stands.

It also makes sense that Cioccolata and Secco were able to corner and overpower him and Gelato because shape shifting wouldn't be any good against Cioccolata's ho dust I mean mold.
Sadly, we may never know the truth behind Sorbet and Gelato. Were they standless or simply had weaker stands that just didn't stand a chance? What were they really like? Were they murderous psychopaths or crazy extremist? Za warudo may never know, but we're gonna headcanon the hell outta them!
