Inspired by both Elphaba and Emerald City, this vibrant green sauce aligns visually, while keeping flavors creamy and a big winner for kids. The mild cheesy flavor and smooth texture from the ricotta and parmesan provides a mac and cheese sauce upgrade!

Base Pasta Dough Recipe (based on Philips manual)

Ingredients:

2 cups all purpose flour

1 large egg

Water to reach 95 ml total liquid (egg +water combined)

Pasta:

Directions:

1. Add flour to chamber

2. Beat egg and add water to total 95 ml.

3. Start machine and slowly pour liquid in.

4. Extrude desired shape.

Ingredients:

1 teaspoon olive oil

1 cup fresh spinach, packed

1/2 cup whole milk ricotta cheese

1/4 cup finely grated parmesan

1-2 tablespoons reserved pasta water (for smoothness)

1/2 teaspoon garlic powder

Salt and pepper to taste

Directions:

1. Heat 1 teaspoon olive oil in a small pan over medium-low heat. Add spinach.

2. Cook 1-2 minutes until just wilted. Cool slightly. Squeeze out excess moisture with a paper towel.

3. Add spinach, ricotta, parmesan, and spices to the blender. Blend until completely smooth and bright green.

4. Add 1-2 tablespoons warm pasta water and blend until silky. Toss immediately with hot pasta.
