list of professions from a Chinese-to-English textbook
This is a page out of the 咸豐五年 (1855) 清朝 (Qing dynasty era) book 《華英通語》 (Chinese-to-English Conversant); its aim was to teach Chinese people (mainly anyone whose job requires interactions with English-speaking foreigners back-in-the-day) common English words using Cantonese phonetic approximations (most of the Chinese who had first interactions with foreigners — mostly English-speaking Brits — were the Cantonese).
This appears to be a page on "professions” (like the OP stated) but…with "professions” like ‘Villain’, ‘Adulterer’ and ‘Tenant’…🤪 I don't really know what to make of this categorization! 😳😹
And the way to read this page is to read the bigger Chinese characters from right to left, while the smaller characters (which are the phonetic approximations from Cantonese to English) are read from left to right.

妓婦 (🥮 gei⁶ fu⁵) → W-h-o-r-e → 「苛了」 (🥮 ho¹ liu⁵)
替身 (🥮 tai³ san¹) → Substitute → 「濕士啲昭」 (🥮 sap¹ si⁶ di¹ ciu¹)
n.b.: 光棍 does not exactly translate directly to ‘villain’; ‘villain’ would be 奸人 (🥮 gaan¹ jan⁴) or 惡人 (🥮 ok³ jan⁴). 光棍 is more specific to ‘fraudster’ or ‘con-artist’ or ‘hoodlum’.
n.b. II: For Anglosphere-speaking folks, ‘j’ is pronounced like a ‘y’ in 🥮 Jyutping — Cantonese Romanisation.
